Chicken Cacciatore with Vegetables

Prep. Time: 25 minutes Cooking Time: 4 hours Ideal slow-cooker size: 5-qt.
Needed at Time of Preparation:
2 lbs. boneless, skinless chicken thighs
28-oz. can diced tomatoes
½ red bell pepper and ½ green bell pepper cut lengthwise
½ large onion, chopped
1 tsp. dried oregano
1 bay leaf
salt and pepper to taste
1-lb. bag baby carrots
Preparation Instructions:

  1. Place all ingredients into a gallon-sized freezer bag and smoosh around so everything is evenly coated.
  2. Remove as much air as possible and seal bag.
  3. Label the bag with the information below, then freeze.
    Information for Freezer Bag:

    Needed at Time of Cooking:
    3–4 large potatoes, chopped into chunks
    Instructions:
  1. Thaw bag completely for 24–48 hours or more.
  2. Grease interior of slow-cooker crock.
  3. Place potatoes and contents of freezer bag into the crock. Stir.
  4. Cover. Cook on Low for 4 hours, or until instant-read meat thermometer registers 160°F when stuck into center of the meat, and veggies are as tender as you like them.
  5. Remove bay leaf before serving.
