Chicken Dijon Dinner

Makes 4–6 servings
Prep. Time: 20 minutes Cooking Time: 4 hours Ideal slow-cooker size: 6-qt.
Needed at Time of Preparation:
2 lbs. boneless, skinless chicken thighs
2 cloves garlic, minced
1 Tbsp. olive oil
6 Tbsp. white wine vinegar
4 Tbsp. soy sauce *replace with tamari or liquid aminos to make this recipe gluten-free
4 Tbsp. Dijon mustard *check to make sure yours is gluten-free to make this recipe gluten-free
1 lb. sliced mushrooms
Preparation Instructions:

  1. Place all ingredients in a gallon-sized freezer bag.
  2. Smoosh bag around to coat everything evenly.
  3. Remove as much air as possible and seal bag.
  4. Label the bag with the information below, then freeze.

    Instructions:
  5. Thaw bag completely for 24–48 hours or more.
  6. Grease interior of crock.
  7. Cover. Cook on Low for 4 hours, or until instant-read meat thermometer registers 160°F when stuck in center of chicken.
  8. Serve chicken topped with sauce.
