Italian Frittata

Makes 6 servings

Prep. Time: 10 minutes  Cooking Time: 3–4 hours  Ideal slow-cooker size: 5- or 6-qt.

Needed at Time of Preparation:

10 eggs, beaten

1 Tbsp. chopped fresh basil

1 Tbsp. chopped fresh mint

1 Tbsp. chopped fresh sage

1 Tbsp. chopped fresh oregano

½ tsp. sea salt

⅓ tsp. pepper

1 Tbsp. grated Parmesan cheese

¼ cup diced prosciutto (leave out to keep this recipe vegetarian)

½ cup chopped onion

Preparation instructions:

1.   In a gallon-sized freezer bag, add all of the ingredients.

2.   Smoosh the bag until the contents are well-mixed.

3.   Remove as much air as possible and seal bag.

4.   Label the bag with the information below, then freeze.

Information for Freezer Bag:

ITALIAN FRITTATA

Instructions:

1.   Thaw bag completely for 24–48 hours or more.

2.   Spray your crock with nonstick spray.

3.   Pour the contents of the bag into the crock.

4. Cover and cook for at least 3-4 hours.
