Marinated Chicken Bites

Makes 6–8 servings
Prep. Time: 5-10 minutes Cooking Time: 3½–4 hours Ideal slow-cooker size: 4-qt.
Needed at Time of Preparation:
½ cup of soy sauce
¼ cup oil
¼ cup apple cider vinegar
1 tsp. oregano
½ tsp. basil
¼ tsp. garlic powder
¼ tsp. parsley
¼ tsp. black pepper
2 lbs. boneless, skinless chicken breast
Preparation Instructions:

  1. Combine all ingredients except chicken in a freezer bag. Seal and shake to combine.
  2. Add chicken to bag.
  3. Remove as much air as possible and seal bag.
  4. Label with the information below, then freeze.
    TIP: If 6–8 servings are just too much for you, either split the recipe between 2 freezer bags or make it all and freeze the leftovers.

    Makes 6–8 servings
    Cooking Time: 3½–4 hours Ideal slow-cooker size: 4-qt.
    Serving Suggestion: Serve with garlic bread and salad. *omit garlic bread to keep this recipe gluten-free
  5. Thaw bag completely for 24–48 hours or more.
  6. Place contents of the bag in a slow cooker and cook for 3½–4 hours on Low.
  7. Cut chicken into serving-sized pieces and serve with salad and garlic bread, if desired.
