Slow-Cooker Chicken Fajitas

Needed at Time of Preparation:
2 lbs. boneless, skinless chicken breasts
2 peppers, sliced (red, green, or yellow)
1 large onion, sliced
1 envelope taco seasoning choose a gluten-free brand to keep this recipe gluten-free 10-oz. can Rotel or plain diced tomatoes
juice of 1 lime
Preparation Instructions:

  1. Place all ingredients into a gallon-sized freezer bag and smoosh around to coat everything and mix.
  2. Remove as much air as possible and seal bag.
  3. Label the bag with the information below, then freeze.
    TIP: If 6–8 servings are just too much for you, either split the recipe between 2 freezer bags or make it all and freeze the leftovers.

  1. Thaw bag completely for 24–48 hours or more.
  2. Empty contents of freezer bag into the crock.
  3. Cover and cook on low 7–8 hours or High 3–4 hours.
  4. If you prefer, you can shred the chicken before serving or serve sliced.
