Savory Pork Loin

Makes 6–8 servings
Prep. Time: 10 minutes Cooking Time: 6–8 hours Ideal slow-cooker size: 3- to 5-qt.
Needed at Time of Preparation:
3½-lb. pork loin
¼ cup soy sauce *replace with tamari or liquid aminos for gluten-free
¼ cup light brown sugar
½ cup tomato juice
1 Tbsp. lemon juice
1 tsp. Worcestershire sauce *make sure yours is gluten-free to make this recipe gluten-free
1½ cups water
Preparation Instructions:

  1. Trim fat off pork loin.
  2. Place all ingredients in a gallon-sized freezer bag and smoosh around to make sure loin is coated well.
  3. Remove as much air as possible and seal bag.
  4. Label with the instructions below, then freeze.
    TIP: If 6–8 servings are just too much for you, either split the recipe between 2 freezer bags or make it all and freeze the leftovers.

    hamburger buns

Instructions:

  1. Thaw bag completely for 24–48 hours or more.
  2. Empty contents of bag into the crock.
  3. Cover and cook on Low 6–8 hours.
  4. If possible, turn several times to coat meat with sauce while cooking.
  5. When done, shred meat and return to sauce.
  6. Serve on hamburger buns.
