Fresh Tomato Soup

*10 Ing. or Fewer *Gluten-Free *Vegetarian–Optional *Vegan–Optional
Makes 6 servings
Prep. Time: 20–25 minutes Cooking Time: 3–4 hours Ideal slow-cooker size: 3½- to 4-qt.
Needed at Time of Preparation:
5 cups diced ripe tomatoes (your choice about whether or not to peel them)
1 Tbsp. tomato paste
4 cups salt-free chicken broth *replace with vegetable broth to make this vegetarian/vegan
*choose gluten-free broth to make this recipe gluten-free
1 carrot, grated
1 onion, minced
1 Tbsp. minced garlic
1 tsp. dried basil
Pepper, to taste
2 Tbsp. lemon juice
1 dried bay leaf
Preparation Instructions:

  1. Place all ingredients into a gallon-sized freezer bag.
  2. Remove as much air as possible and seal bag.
  3. Label bag with the information below, then freeze.
    Information for Freezer Bag:

    Makes 6 servings
    Cooking Time: 3–4 hours Ideal slow-cooker size: 3½- to 4-qt.

Instructions:

  1. Thaw bag completely for 24–48 hours or more.
  2. Empty contents of freezer bag into the crock.
  3. Cook on low for 3–4 hours. Stir once while cooking.
  4. Remove bay leaf before serving.
