Southwest Chicken and White Bean Soup

Needed at Time of Preparation:
1 lb. boneless, skinless chicken breasts, cut into 1-inch cubes
1¾ cups chicken broth *choose gluten-free broth to make this recipe gluten-free
1 cup chunky salsa *choose gluten-free salsa to make this recipe gluten-free
3 cloves garlic, minced
2 Tbsp. cumin
15½-oz. can small white beans, drained and rinsed
1 cup of frozen corn
1 large onion, chopped
Preparation Instructions:

  1. Place all ingredients into a gallon-sized freezer bag.
  2. Remove as much air as possible and seal bag.
  3. Label the bag with the information below, then freeze.

Instructions:

  1. Thaw bag completely for 24–48 hours or more.
  2. Empty contents of freezer bag into the crock.
  3. Cook at least 8-10 hours or 4-5 hours on upper.
