White Chili

Makes 6–8 servings
Prep. Time: 15 minutes Cooking Time: 4–10 hours Ideal slow-cooker size: 5-qt.
Needed at Time of Preparation:
15-oz. can garbanzo beans (chickpeas), undrained
15-oz. can navy beans, undrained
15-oz. can pinto beans, undrained
1-qt. frozen corn, or 2 1-lb. bags frozen corn
1½ cups shredded cooked chicken
2 Tbsp. minced onions
1 red bell pepper, diced
3 tsp. minced garlic
3 tsp. ground cumin
½ tsp. salt
½ tsp. dried oregano
2 15-oz. cans chicken broth *choose gluten-free broth to make this recipe gluten-free
Preparation Instructions:

  1. Place all ingredients into a gallon-sized freezer bag.
  2. Remove as much air as possible and seal bag.
  3. Label bag with the information below, then freeze.
    TIP: If 6–8 servings are just too much for you, either split the recipe between 2 freezer bags or make it all and freeze the leftovers.

Instructions:

  1. Thaw bag completely for 24–48 hours or more.
  2. Empty contents of freezer bag into the crock.”
